Black & White Bean Soup

Ingredients

1 tablespoon olive oil

1 cup chopped onion (1 lg)

4 cloves garlic, chopped

1 (15.5 oz) can great northern beans, rinsed and drained

1 (15 oz) can black beans, rinsed and drained

2 cans fire-roasted crushed tomatoes

1 can Mexicorn, with juice

4 ozs chopped green chiles

14 ounces vegetable or chicken broth

1 tablespoon chile powder

1 teaspoon cumin

Directions

Heat oil to saute onion & garlic.
Add remaining ingredients. Heat to boiling, reduce heat, cover & simmer 30 minutes.
